Vinification and ageing
Taken from grapes harvested when wellripened, delicately destemmed and gently pressed. The Insolia and Chardonnay must ferment in stainless steel containers at a controlled temperature, and are kept on yeasts for 6 months. The wine is then refined for a few months in the bottle.
Straw yellow with slight golden hues.
Ample, with hints of white flowers and exotic fruit.
Sapid and fresh, with delicate hints of sweet almond.
Serve at around 12°C
Perfect with delicate vegetable or fish-based starters, rice and pasta dishes. Excellent with mullet in umido (simmered in a tomato sauce) and grilled prawns.
